Seed Crackers

This recipe is great for people who are vegan or eating a keto diet. I like them not only because they are healthy, but because they are easy to make and delicious. You can add a variety of add-ins to have more choices of flavors.

Ingredients
  

For the crackers:
  • 2 Tbsp olive oil divided
  • 1 cup flax seeds
  • ¾ cup sunflower seeds
  • ¾ cup pumpkin seeds (pepitas)
  • ½ cup hemp seeds
  • ¼ tsp salt
  • 1 cup warm water
Optional add-ins:
  • chili flakes
  • dried herbs
  • onion or garlic powder
  • everything bagel seasoning

Instructions
 

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper and brush 1 tablespoon of olive oil on top.
  2. In a medium size bowl, combine the flax seeds, sunflower seeds, pumpkin seeds, hemp seeds, salt, and water to a bowl. Stir to combine. If you’re adding seasonings, mix them in now. Let the mixture sit for 15 minutes to allow the flax seeds to gel and bind everything together, stirring every 5 minutes.
  3. Spread the seed mixture into a thin layer that covers the surface of the pan. The thinner you spread it, the crispier your seed crackers will be. Brush the top of the seed layer with 1 tablespoon of olive oil.
  4. Bake for 25-35 minutes, or until firm and lightly golden around the edges.
  5. Remove from the oven and let cool completely. Once cooled, break it apart with your hands into your desired size of crackers.
