Coconut Waffles

These waffles have a mild coconut flavor that everyone will love. They are crisp on the outside and tender on the inside.

  1. Preheat oven to 400°. Toast coconut on a rimmed baking sheet until golden brown, about 2 minutes. Let cool.
  2. In a large bowl whisk together the flour, cornstarch, salt, baking powder, and baking soda.
  3. In a medium bowl whisk together the eggs, buttermilk, coconut milk, coconut oil, sugar, vanilla, and coconut extract.
  4. Whisk buttermilk mixture into dry ingredients (do not overmix). Mix in ¾ cup coconut; set aside remaining coconut.
  5. Heat a waffle maker until very hot. Coat with nonstick spray. Working in batches, cook waffles until golden brown. Serve topped with butter, syrup, reserved coconut, and whipped cream if desired.

Notes

If you prefer to not use gluten free flour, you can substitute all purpose flour using the same measurement.
To keep waffles warm and crisp while you are making all of the batches, place waffles directly on the middle oven rack with the oven heated to 200℉.
