This chili recipe is a crowd pleaser. You can add more or less spice depending on your preference. It is a great make-ahead meal as it tastes even better the next day.

- In a large pot, heat olive oil over medium high heat. Add diced onion and celery and sauté until softened.
- Add garlic and sauté for 30 seconds while stirring to prevent it from burning.
- Add the tomato paste and cook for 2 minutes while stirring to prevent burning.
- Add ground beef and sausage to the onion mix and break up into small pieces. Cook until fully cooked through.
- Once the meat is cooked through, add the bottle of beer and bring to a simmer. Cook for 5 minutes allowing the alcohol to cook off and it is reduced by 50%.
- Add the crushed tomatoes, diced tomatoes, chili powder, cumin, cayenne pepper if using, and cocoa. Bring to a simmer and cook until heated through.
- Add the black, white, and pinto chili beans with the sauce from the cans. Continue simmering until heated through.
- Serve plain or with desired toppings.
