Ingredients
  

  • 3 Tbsp olive oil
  • 1 large white onion diced
  • 3 stalks of celery diced
  • 2 cloves garlic grated or minced
  • 2 Tbsp tomato paste
  • 1 ½ pounds lean ground beef
  • 1 pound ground sausage
  • 1 bottle gluten free beer I prefer Anheuser-Busch Redbridge Lager
  • 1 (28 oz.) can crushed tomatoes
  • 1 (14.5oz.) can petite diced tomatoes
  • cup chili powder
  • 2 Tbsp ground cumin
  • ¼ tsp ground cayenne pepper optional
  • 2 tsp unsweetened cocoa powder
  • 1 (15.5 oz.) can black beans in mild chili sauce
  • 1 (15.5 oz.) can white beans in mild chili sauce
  • 1 (15.5 oz.) can pinto beans in mild chili sauce
  • optional toppings: sour cream, shredded cheese, avocado, corn chips

Instructions
 

  1. In a large pot, heat olive oil over medium high heat. Add diced onion and celery and sauté until softened.
  2. Add garlic and sauté for 30 seconds while stirring to prevent it from burning.
  3. Add the tomato paste and cook for 2 minutes while stirring to prevent burning.
  4. Add ground beef and sausage to the onion mix and break up into small pieces. Cook until fully cooked through.
  5. Once the meat is cooked through, add the bottle of beer and bring to a simmer. Cook for 5 minutes allowing the alcohol to cook off and it is reduced by 50%.
  6. Add the crushed tomatoes, diced tomatoes, chili powder, cumin, cayenne pepper if using, and cocoa. Bring to a simmer and cook until heated through.
  7. Add the black, white, and pinto chili beans with the sauce from the cans. Continue simmering until heated through.
  8. Serve plain or with desired toppings.
