Coconut Rice

Ingredients
  

  • 1 Tbsp unsalted butter
  • 2 cups basmati or jasmine rice
  • 1 (13-14 ounce) can unsweetened coconut milk
  • 1 cup water
  • 1 ½ tsp kosher salt

Instructions
 

  1. Melt the butter in a medium saucepan over high heat. Add the rice and stir to coat the grains in the butter.
  2. Add the coconut milk, water, and salt. Bring to a boil. Stir and then cover, reduce the heat to low and cook until tender, about 15 minutes.
  3. Remove the rice from the heat and let sit, covered, for 5 minutes. Remove the lid and fluff the rice with a fork.
