- Preheat oven to 400°F. Line baking sheets with parchment paper and set aside.
- In a large bowl of a stand mixer with a paddle attachment, add in the cubed cold butter, brown sugar, and sugar and beat until the mixture is creamy and combined with no clumps of butter remaining.
- Add in the eggs and vanilla and mix well.
- Add the flour, cornstarch, baking soda, salt, and nutmeg if using. Mix until combined.
- Add the white chocolate chips and macadamia nuts and mix until combined.
- Use a large scoop to scoop out dough, placing 2 inches apart on a cookie sheet. Roll into balls and flatten slightly.
- Bake for 10 minutes or until light golden brown. Let cool on baking sheet for 10 minutes before transferring cookies to a cooling rack.
Notes
If you prefer to not use gluten free flour, you can substitute all purpose flour using the same measurement.
