Ingredients
  

  • 1 cup unsalted butter cold, cut into small cubes
  • ¾ cup light brown sugar
  • ½ cup sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 2 ½ cups gluten free flour I recommend King Arthur Measure For Measure Gluten Free Flour
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1 tsp salt
  • ¼ tsp ground nutmeg optional
  • 2 cups white chocolate chips
  • 2 cups macadamia nuts roasted and roughly chopped

Instructions
 

  1. Preheat oven to 400°F. Line baking sheets with parchment paper and set aside.
  2. In a large bowl of a stand mixer with a paddle attachment, add in the cubed cold butter, brown sugar, and sugar and beat until the mixture is creamy and combined with no clumps of butter remaining.
  3. Add in the eggs and vanilla and mix well.
  4. Add the flour, cornstarch, baking soda, salt, and nutmeg if using. Mix until combined.
  5. Add the white chocolate chips and macadamia nuts and mix until combined.
  6. Use a large scoop to scoop out dough, placing 2 inches apart on a cookie sheet. Roll into balls and flatten slightly.
  7. Bake for 10 minutes or until light golden brown. Let cool on baking sheet for 10 minutes before transferring cookies to a cooling rack.

Notes

If you prefer to not use gluten free flour, you can substitute all purpose flour using the same measurement.
