Lemon Trifle

This is a simple dessert perfect for springtime. It has a bright and refreshing lemon flavor.

Ingredients
  

  • 1 lemon loaf cake cut into cubes
  • 1 ½ cups lemon curd I used Bonne Maman Lemon Curd
  • 6 cups sweetened whipped cream see note
  • ½ cup lemon crumbles (optional) I used King Arthur Lemon Crumbles

Instructions
 

  1. Place a layer of cake cubes at the bottom of a large glass trifle dish.
  2. Top cake cubes with a layer of lemon curd.
  3. Top the lemon curd with a layer of whipped cream.
  4. Repeat the layers until you have used all of your ingredients, ending with a layer of whipped cream. I like to sprinkle lemon crumbles on top for added flavor and texture.
  5. You can serve right away or chill for a couple of hours. Chilling allows the moisture from the curd and the whipped cream to soak into the cake.

Notes

To make homemade sweetened whipped cream: Whip together three cups cold whipping cream and 1/2 cup powdered sugar until soft peaks form.
This recipe could also be made in individual serving sizes using small glass dishes or mason jars.
You could also make this dessert by topping individual slices of lemon cake with a dollop of lemon curd and whipped cream.
