Chimichurri Sauce

This sauce adds a punch of flavor to grilled meats, fish, and vegetables. You could also use it as a marinade or dipping sauce.

Ingredients
  

  • 1 cup finely chopped fresh parsley
  • cup extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • 1 large garlic clove minced
  • ½ teaspoon sea salt
  • ¼ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes
  • teaspoon paprika

Instructions
 

  1. In a food processor, pulse together the parsley, olive oil, vinegar, garlic, salt, oregano, red pepper flakes, and paprika. Do not over blend, it should be chunky rather than smooth like a pesto. Alternatively, you could whisk the ingredients together in a small bowl.
  2. Season to taste and serve cold or at room temperature. Store leftovers covered in the refrigerator.
