These pancakes will (literally) melt your heart! They are thick, fluffy, and full of flavor.

- In a medium size bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg and vanilla powder if using.
- In a separate bowl, whisk together the sour cream, milk, eggs, and vanilla.
- Add the wet ingredients to the dry ones, mixing only until combined.
- Cut one banana in slices and the other banana into small pieces.
- Set griddle to medium heat and melt 1 tablespoon of butter. Ladle the pancake batter onto the griddle to make 6 pancakes.
- Distribute the small pieces of bananas onto each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute until browned.
- Add more butter to the griddle, and continue cooking pancakes until all the batter is used. Serve with sliced bananas, butter, and maple syrup.
Notes
If you prefer to not use gluten free flour, you can substitute all purpose flour using the same measurement.
You can easily swap out the bananas for blueberries, chocolate chips, or any other desired add-ins. You could also top the pancakes with a variety of ideas such as whipped cream and toasted walnuts. If you are celebrating a birthday, you could add sprinkles to the batter as well as on the top as a garnish.
