Chocolate Bunny Cake

This cake looks just like the chocolate bunny I used to get in my Easter basket when I was growing up. It uses my Fudgy Chocolate Cake recipe which is a dense cake that withstands the weight of the ganache.

Ingredients
  

For the cake recipe:
For the "chocolate glue":
  • cup chocolate chips melted
For the ganache:
  • ½ cup heavy cream
  • 1 cup chocolate chips I used semisweet chocolate chips
  • 2 Tbsp light corn syrup

Instructions
 

For the cake:
  1. Preheat the oven to 350℉. Coat a 3D bunny cake mold with nonstick cooking spray and set on a large baking sheet.
  2. Prepare the Fudgy Chocolate Cake as directed.
  3. Fill each side of the bunny cake mold 2/3 full. You will have extra batter and can use it to make a small cake if desired.
  4. Bake until a toothpick inserted into the middle comes out clean, about 35 minutes. Let cool completely in the molds. If needed, trim cakes to make them flat and even to the top of the molds. Then invert the cakes onto cooling rack.
For the "chocolate glue":
  1. Add 2/3 cup of chocolate chips to a small bowl. Microwave for 90 seconds, stirring every 30 seconds to prevent burning.
  2. Apply 1/3 cup of the melted chocolate to the flat surface of each cake. Place the flat sides of the cakes together to make your 3D bunny. Set aside until the chocolate is set.
For the ganache:
  1. In a medium bowl, combine the heavy cream and corn syrup. Microwave for 1 minute or until very hot.
  2. Add one cup chocolate chips to the hot cream mixture and let sit for 5 minutes to soften. Then stir the mixture until it is combined and smooth.
To assemble:
  1. Place a cooling rack over a baking sheet. Place bunny cake on the cooling rack. Pour the ganache over the bunny and let the ganache set. If desired, you can apply a second coat of ganache.
  2. Once set, transfer your bunny to a cake platter. See note for decoration details.

Notes

I used green food coloring to tint sweetened coconut for the “grass” around the bunny. I used peanut butter M&M’s in Easter colors for the “eggs” in the grass.
